Stuffed butternut squash

This delicious butternut squash can be filled and roasted on the BBQ or baked in the oven as a nutritious alternative to a meat dish.

Ingredients:

1 large Butternut squash

1 tablespoon olive oil

Salt & pepper to season

Fresh parsley, finely chopped

 

Filling choices:

  • 250g baby spinach leaves, 1 small red onion - diced finely, 2 Tablespoons pine nuts & 100g feta cheese OR
  • 1 large courgette/marrow (125g) - cut into thin rounds, 1/2 red pepper - diced finely, 50g sun-dried tomato & 100g feta cheese

Method:

  1. Prepare BBQ or heat oven to 220°C/200°C fan/gas mark 7.
  2. Remove the tops from the butternut squash and slice them in half lengthways. Scoop out the seeds.
  3. Brush the squash with olive oil and season with salt and pepper. Place on the barbecue or in the oven and cook for 30 - 40 minutes, or until flesh is tender.
  4. Meanwhile, prepare the filling. Mix the filling ingredients together and add seasoning to taste. Stir-fry ingredients (except feta) in a pan until cooked to satisfaction. Divide the mixture into two.  Remove the cooked squash from the barbecue and fill each half with the stuffing mix and cubed feta cheese.
  5. Carefully return to the BBQ/oven for a further 10 minutes to warm through and allow the feta to soften.
  6. Remove and garnish chopped fresh parsley to serve.
