Ingredients

  • 1 packet of PAXO sage and onion stuffing mix, made up as directed on the pack
  • 4 The Greengrocer’s mixed peppers, cut in half and deseeded
  • 2 The Greengrocer’s tomatoes, diced
  • 6 The Greengrocer’s mushrooms, sliced
  • 4 tbsp SPAR enjoy local medium cheddar cheese, grated

Method

1. Preheat the oven to 190C
2. In a mixing bowl combine the Paxo sage and onion stuffing mix, tomatoes, mushrooms and cheese, saving a little to sprinkle on top before they go into the oven
3. Divide the mixture between the peppers, top with leftover cheese, then transfer to an ovenproof dish and bake for 30-35 minutes until the peppers are cooked and the topping is crisp and golden
