Potato Salad

Take a regular potato salad to the new level with this super easy and versatile recipe!


  • 800g (maris pipers)
  • 2 tsp wholegrain mustard
  • 2 tbsp  white wine vinegar
  • 4 tbsp olive oil
  • 1 onion, finely chopped
  • 3 tbsp mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp horseradish sauce
  • 1 tsp lemon juice
  • 2 spring onions, finely sliced
  • Handful of crispy fried onions


1. Take a large pan of cold salted water and add the potatoes. Bring to the boil and simmer for 10 mins until tender.

2. Whisk the mustard, vinegar, olive oil and onion together in a bowl with some salt and pepper.

3. When the potatoes have slightly cooled, cut them into bite-sized chunks and add them to the mustard dressing, tossing until completely coated. Leave to cool.

4. Take a bowl and mix the lemon juice, sour cream, mayonnaise and horseradish together. When the potatoes are cool, toss them through the mayonnaise mixture along with the spring onions.

5. Put the potato salad onto serving dish and serve alongside crispy onions.
