Egg Noodles

Ingredients 

  • 2 cups flour  
  • 3 eggs  
  • 1 tbsp olive oil  
  • ¼ tbsp salt  
  • ¼ cup water

Method 

  • Combine salt and flour in a bowl, make a well in the centre.  
  • Crack eggs into the well and add olive oil. Gently beat with a fork to gradually incorporate the flour.  
  • Slowly add water until you get the right consistency (dough should be smooth but not sticky.) 
  • Knead dough on a floured surface for 10 minutes until elastic.  
  • Cover dough with a damp cloth and let rest for 30 minutes.  
  • Divide dough into 4 pieces and roll each piece into a thin sheet on a floured surface.  
  • Loosely fold dough sheets and slice into desired strips.  
  • Unfold strips and add a bit of flour to prevent sticking.  
  • Bring salted water to the boil in a large pot and cook noodles for 3-4 minutes.
