Egg Fried Rice

Ingredients 

  • 3 tbsp cooking oil  
  • 3 eggs (beaten) 
  • 500g of cold rice  
  • 2 tbsp soy sauce  
  • 1 pinch of salt  
  • 2 spring onions (finely sliced)

Method 

  • Heat large frying pan over a high heat and add 1 tbsp of cooking oil. Carefully swirl oil around to coat pan  
  • Once oil gets really hot add in beaten eggs and scramble quickly.  
  • When eggs are about half way cooked add the last 2 tbsp of cooking oil in cold rice.  
  • Mix rice with eggs.  
  • Add soy sauce and salt to taste. Combine well.  
  • Stir in finely sliced green onions and serve immediately.
