Method 
- Heat large frying pan over a high heat and add 1 tbsp of cooking oil. Carefully swirl oil around to coat pan  
 
- Once oil gets really hot add in beaten eggs and scramble quickly.  
 
- When eggs are about half way cooked add the last 2 tbsp of cooking oil in cold rice.  
 
- Add soy sauce and salt to taste. Combine well.  
 
- Stir in finely sliced green onions and serve immediately.
