Avocado Egg Toast

Ingredients 

  • 2 slices of bread (we recommend sourdough or wholegrain)  
  • ½ avocado, mashed  
  • 2 eggs  
  • Salt and pepper  
  • Butter or cooking oil  
  • Optional: hot sauce, red pepper flakes

Method 

  • Carefully cut avocado in half and remove pit. Scoop out one half and use fork to mash in a bowl (add salt and pepper to taste if necessary.) 
  • Heat butter/oil in a pan on a low-medium heat and crack in eggs. Cook on low until whites solidify and yolk is cooked as desired.  
  • While eggs are cooking toast bread.  
  • Once done, place mashed avocado on toasted bread, add egg on top and sprinkle with salt and pepper to taste.  
  • Optional: season with chilli flakes or hot sauce of choice if desired!
