Method 
- Carefully cut avocado in half and remove pit. Scoop out one half and use fork to mash in a bowl (add salt and pepper to taste if necessary.) 
 
- Heat butter/oil in a pan on a low-medium heat and crack in eggs. Cook on low until whites solidify and yolk is cooked as desired.  
 
- While eggs are cooking toast bread.  
 
- Once done, place mashed avocado on toasted bread, add egg on top and sprinkle with salt and pepper to taste.  
 
- Optional: season with chilli flakes or hot sauce of choice if desired!
